The chefs at Olot's Les Cols restaurant will be explaining the influence of La Garrotxa's volcanoes on their cooking, "in terms of produce and character".
At their restaurant in the Volcanic Zone Nature Park in La Garrotxa - the Iberian Peninsula's best exponent of volcanic landscapes - the volcanic influence on cuisine at Les Cols is undeniable. The orography, the soil and the climate produce wide and varied vegetation, moist and exuberant, with spectacular oak and beech groves mapping out the local gastronomy.
Fina Puigdevall and Martina Puigvert, mother and daughter, both chefs at the restaurants, will be talking about this territory's volcanic produce and how they apply it to their gastronomy at Les Cols**.
