Hawaii, the volcanic Pacific

The chef at Waiahole Poi Factory (Honolulu, USA), Liko Hoe, will be travelling thousands of kilometres to talk about the Hawaiian culture.

Liko Hoe, the American archipelago's leading chef, will be explaining how the environment conditions his food, and "how our food determines our identity". The staple diet in Hawaiian culture is the taro leaf, especially in a hand-crushed format known as "poi". This foodstuff is an integral part of the environment and the history of Hawaiian natives, both physically and spiritually. Hoe will be explaining this at Worldcanic.

As an old Hawaiian man once said: "Wherever you find taro leaves, you find Hawaiians", says the chef.
