Cooking on the foothills of the Mayon volcano

He is a Spanish chef, but he has lived and worked for years in one of the world's most volcanic countries, the Philippines. His cooking recreates territory he settled in.

Cantabrian Chele González (Gallery by Chele, Manila, Philippines) will be explaining the environment and the volcanic geography of the Asian archipelago, concentrating on the main product, the taro leaves that grow on the hillsides of the Mayon volcano. 

González will also dwell on the experience of the aborigines, the Aetas, and how they had to adapt, move and relocate in the wake of various eruptions. The last eruption was the Pinatubo volcano in 1991.
