American Ryan Roadhouse will be showing how he cooks Japanese with volcanic produce from the state of Oregon.
In Oregon's volcanic area, Ryan Roadhouse (Nogoduro, Portland, USA) offers Japanese fare with local produce, "which we found was, in some cases, similar to, or had similar functions to, Asian products". On that basis, Roadhouse will be telling the congress how he combined the two regions to create "something unique and original".
