Paulo Costa
Chef at Caldeiras & Vulcões (Furnas, Azores, Portugal)
After working in Disney World, he went back to the islands in the Atlantic to work on geothermal cookery.
Paulo Costa was born in Portugal's Azores islands in 1986, and acquired a fondness for cookery from a very early age in the idyllic Vale das Furnas, but it was not until 2006 that he arrived at the Tourism and Hotel School in Ponta Delgada (the capital of the archipelago) to study a professional cookery and confectionery course.
In 2010 his dreams and ambition to learn the trade led him to cross the Atlantic and spend six months at Walt Disney World (Florida, USA). During this period he also studied a Leadership Course at the East Carolina University. On his return to the Azores, in 2011 the chef opened his Caldeiras & Vulcões restaurant in Furnas, 40 km from Ponta Delgada.
Costa now generates his cuisine on a clear premise: to use local produce and make use of the natural conditions of his surroundings to come up with recipes made with geothermal cookery techniques.
